Dan Weiland, formerly of Trenchermen, Blackbird, Avec, Isabella's Estiatorio and Custom House Tavern, is excited to begin this new chapter with Forbidden Root, creating a menu that’s American rustic and emphasizes, complements, and incorporates the beers. 

His love for cooking began early. Having a Latino grandfather and a Czech great-grandmother exposed him to a diversity of ingredients and flavors.

For Dan, inspiration is a constant journey to be the best, to push himself beyond complacency, always teaching and learning. In his spare time he enjoys biking, music, exploring Chicago's food scene, and traveling.
